Ingredients
4ouncescream cheesesoftened
2cupscooked chicken(shredded or chopped)
1cupshredded Monterey Jack cheese
1/4cupsalsa
2tablespoonschopped fresh cilantro
1teaspoonchili powder
½teaspoongarlic powder
½teaspoon cumin
¼teaspoonkosher salt
¼teaspoonblack pepper
12corntortillas
Instructions
Combine the cream cheese, chicken, shredded cheese, salsa, chopped cilantro, chili powder, garlic powder, cumin, salt & pepper into a large mixing bowl. Mix until everything is well combined and no cream cheese chunks remain. * I like to soften the cream cheese in the microwave for about 15-20 seconds to ensure that it's really softened to avoid any lumps in the mixture.
4 ounces cream cheese, 2 cups cooked chicken, 1 cup shredded Monterey Jack cheese, 1/4 cup salsa, 2 tablespoons chopped fresh cilantro, 1 teaspoon chili powder, ½ teaspoon garlic powder, ½ teaspoon cumin, ¼ teaspoon kosher salt, ¼ teaspoon black pepper
Warm 3-4 corn tortillas up, wrapped in a slightly damp paper towel, in the microwave for about 25 seconds. Spread about 3 tablespoons of the chicken filling onto each corn tortilla and roll them up tightly. Place them seam-side down onto a plate. Continue until all the filling is gone. * Only warm up, and work with, a few at a time to ensure that the tortillas stay warm and pliable.

Preheat the air fryer to 400℉.
Place 5-8 taquitos into the air fryer basket and spray them lightly with cooking spray. * I like to also sprinkle some kosher salt on top of the taquitos after brushing them with oil. You can also spray the taquitos with cooking spray. * Don't overcrowd the air fryer basket. You don't want the taquitos touching each other, this will prevent them from getting crispy on all sides.
Cook for 6 minutes and then turn them over and cook for an additional 5-6 minutes or until crispy.
