Easy Apple Streusel Muffins

Easy Apple Streusel Muffins are quick to make with a cinnamon muffin mix, chunks of fresh apples, warm spices, and finished off with a streusel crumble and sweet vanilla glaze.

Ingredients
  

Apple Muffins

  • 1 box (13.9 oz) cinnamon muffin mix with streusel topping (reserve streusel topping for later)
  • cups peeled & chopped apples (*see notes)
  • 3/4 cup whole milk
  • 1/3 cup butter melted
  • teaspoon ground cloves OR apple pie spice

Vanilla Glaze

  • 1/2 cup powdered sugar
  • 1-2 tablespoons whole milk
  • ½ teaspoon vanilla extract

Instructions

  • Preheat the oven to 425℉. Line a 12-cup muffin pan with paper liners or spray with non-stick cooking spray. Set aside.
  • In a medium mixing bowl, add the dry cinnamon muffin mix, chopped apples, milk, melted butter, and ground cloves. Stir together with a rubber spatula or wooden mixing spoon until thoroughly combined.

  • Scoop the batter evenly into the prepared muffin cups filling each one about 3/4 of the way full with batter. Sprinkle the reserved streusel topping (from the muffin mix box) on top of each muffin.
  • Bake for 20-25 minutes or until the tops are golden brown, spring back when lightly touched, or a toothpick inserted into the center comes out clean.
  • Remove the muffins from the oven and place them on a cooling rack.
  • Stir together the powdered sugar, milk, and vanilla extract in a small bowl using a whisk or a fork. Immediately drizzle the vanilla glaze over top of each warm muffin.
    * You can glaze the muffins in the muffin pan OR remove the muffins to the cooling rack and glaze them there.
    * Add more or less milk to the glaze to get the consistency you prefer. .
    1/2 cup powdered sugar, 1-2 tablespoons whole milk, ½ teaspoon vanilla extract
  • Serve the muffins warm. Enjoy!

Notes

Swaps : You can substitute canola oil or vegetable oil for the melted butter (same amount, 1/3 cup) OR you can use plain applesauce in place of the melted butter for a healthier swap (same amount, 1/3 cup).
Apples : You need about 2 apples to equal 1.5 cup of chopped apples. Peel the apples first and then dice them really small or you can shred the apples using a box grater. Good options for the apples are Granny Smith apples, gala apples, fuji apples, pink lady apples, or try a mix of two different varieties.
