Easy Berry Cobbler Dessert
This simple cake mix berry cobbler is one of my favorite easy summer desserts – with only 5 easy ingredients and a few minutes if prep time, this dessert comes together quickly and it’s something that everyone loves.
Frozen berries make up a tart & sweet berry filling, topped with a buttery brown sugar cake mix batter on top, and then it’s baked until golden brown perfection and the fruit is bubbly and warm.
The best part is serving the berry cobbler warm with a scoop of ice cream on top! The warm dessert topped with the frozen ice cream is just perfection.

Ingredient List For This Easy Berry Dessert
- Frozen Berry Medley Mix : This is bag of frozen fruit that comes in a mixed berry blend; usually including blueberries, strawberries, raspberries, or sometime blackberries.
- French Vanilla Cake Mix
- Brown Sugar : Light brown sugar or dark brown sugar can be used in this recipe.
- Cornstarch
- Milk : I prefer using a higher-fat milk in baking recipes such as whole milk or half and half, 2% is another good option, but I would recommend not using fat-free.
- Butter
- Vanilla Ice Cream and/or Whipped : These are for serving the berry cobbler with. The warm cobbler is amazing with a scoop of cold ice cream on top!

How To Make Mixed Berry Cobbler With Frozen Berry Mixture (Printable Recipe Card)
Preheat the oven to 350 degrees F. Spray a 9×13 baking dish with nonstick cooking spray. Set aside.
In a large bowl, stir together the frozen berries, 1/2 cup of the French vanilla cake mix, brown sugar and cornstarch until well combined and the berries are coated.
Spread the fruit mixture into an even layer in the prepared baking dish. If there is extra dry ingredient mixture in the bowl, sprinkle it on top of the fruit in the pan.

In the same empty mixing bowl, stir together the remaining cake mix, milk, and melted butter just until combined.
Drop the batter over the berries and. gently spread it out as evenly as possible. There may be bumps and holes and this normal.

Bake for 45-55 minutes or until the top is golden brown, the fruit is bubbly, and a toothpick inserted into the thickest part of the topping comes out with crumbs and no wet batter.
Remove from the oven and let it cool for 5-10 minutes. Serve warm with a scoop of vanilla ice cream or whipped cream. Enjoy!


How To Store Mixed Berry Cobbler
Berry cobbler is best served fresh & warm, however leftovers can be stored for up to 4 days in the refrigerator. Be sure to cover it well with a lid or plastic wrap, or remove individual servings to an airtight container, for storing.
You can reheat leftovers in the microwave until heated through or some like to eat it chilled or at room temperature. Either way works fine, but again, this cobbler is best enjoyed warm and fresh from the oven.


Substituions & Variation Ideas
- Cake Mix : You can also try using a vanilla cake mix, white cake mix, lemon cake mix, or switch it up completely and use a chocolate cake mix.
- Frozen Berries : Different brands have different medleys of berries so choose your favorite berries. Some have cherries in them, some have blackberries, etc. I use a package of mixed berries that blueberries, strawberries, and raspberries.
- Butter : I prefer salted butter, but if you want a lower-sodium option, or just prefer using it, unsalted butter works well too.

- 1/4 cup packed light brown sugar
- 1 tablespoon cornstarch
- 2/3 cup whole milk
- 1/2 cup (1 stick) salted butter melted
- vanilla ice cream or whipped cream for serving
