1 pound lean ground beef 1½ teaspoons minced garlic 5 tablespoons ketchup 2 tablespoons yellow mustard 2 tablespoons dill pickle relish 1 tube jumbo flaky biscuits 48 cubes mild cheddar cheese
In a large skillet pan, over medium-high heat, brown and crumble the ground beef until the beef is no longer pink. Drain the excess grease from the pan.
Stir in the ketchup, mustard, and relish until combined well.
Open the biscuit can and cut each biscuit in half vertically. You should have a total of 16 smaller pieces of biscuit.
Flatten each biscuit piece with your hands or a rolling pin, and then press it into a muffin pan cavity to create the 'biscuit cup'.
Place one cheese cube onto the bottom of each biscuit cup. Scoop 1.5 tablespoons of the ground beef mixture into each biscuit cup.
Bake for 5-7 minutes. Place two more cheese cubes on top of each biscuit cup.
Bake for an additional 5-7 minutes, or until the cheese has melted and the biscuit cups are golden brown.
Allow them to cool for about 3-5 minutes before removing them from the muffin tin and serving.
