Cheeseburger Cups

Cheeseburger Cups are a fun and delicious twist to a classic cheeseburger! Each biscuit cup is cheesy, flavorful, flaky, and loved by all. An easy 30 minute dinner recipe that is sure to be a hit. 

Ingredients
  

  • 1 pound lean ground beef
  • teaspoons minced or chopped garlic
  • 5 tablespoons ketchup
  • 2 tablespoons yellow mustard
  • 2 tablespoons dill pickle relish
  • 1 tube (16 oz) jumbo flaky biscuits (8 count can)
  • 48 cubes mild cheddar cheese (1/2 of an 8 oz block of cheese)

Instructions

  • Preheat the oven to 375 degrees F. Spray two 12-cup muffin pans with cooking spray. Set aside for now. 
  • In a large skillet pan, over medium-high heat, brown and crumble the ground beef and minced garlic for about 5-7 minutes, or until the beef is no longer pink. Drain the excess grease from the pan.
    1 pound lean ground beef, 1½ teaspoons minced or chopped garlic
  • Stir in the ketchup, mustard, and relish until combined well.
    5 tablespoons ketchup, 2 tablespoons yellow mustard, 2 tablespoons dill pickle relish
  • Open the biscuit can and cut each biscuit in half vertically. You should have a total of 16 smaller pieces of biscuit.
    Flatten each biscuit piece with your hands or a rolling pin, and then press it into a muffin pan cavity to create the 'biscuit cup' for the cheeseburger filling. 
    1 tube (16 oz) jumbo flaky biscuits
  • Place one cheese cube onto the bottom of each biscuit cup. Scoop 1.5 tablespoons of the ground beef mixture into each biscuit cup. 
    48 cubes mild cheddar cheese
  • Bake for 5-7 minutes. 
    Take the pan out of the oven and place two more cheese cubes on top of each biscuit cup.
  • Bake for an additional 5-7 minutes, or until the cheese has melted and the biscuit cups are golden brown. 
  • Allow them to cool for about 3-5 minutes before removing them from the muffin tin and serving.

Notes

Cheese Cubes Tip : Make sure that the cheese cubes are really small cubes. These cheeseburger cups are not huge, so you want to make sure the cheese cubes are not super big pieces. You can use any variety of cheese that you want. I normally use mild cheddar cheese. You can also swap it out and use shredded cheese or cubed Velveeta cheese as well. 
I love using a 1.5 tablespoon cookie scoop to evenly scoop the cheeseburger mixture into each biscuit cup. If you don't have one, I have linked to my favorite one in the blog post above OR just use a tablespoon measuring spoon and measure it out with that. 
Biscuits : After making this recipe for forever, the flaky jumbo biscuits turn out the best. I recommend using a flaky version rather than homestyle or buttermilk version of the biscuits.
