Preheat the oven to 375 degrees F. Spray two 12-cup muffin pans with cooking spray. Set aside for now.
In a large skillet pan, over medium-high heat, brown and crumble the ground beef and minced garlic for about 5-7 minutes, or until the beef is no longer pink. Drain the excess grease from the pan.
1 pound lean ground beef, 1½ teaspoons minced or chopped garlic
Stir in the ketchup, mustard, and relish until combined well.
5 tablespoons ketchup, 2 tablespoons yellow mustard, 2 tablespoons dill pickle relish
Open the biscuit can and cut each biscuit in half vertically. You should have a total of 16 smaller pieces of biscuit. Flatten each biscuit piece with your hands or a rolling pin, and then press it into a muffin pan cavity to create the 'biscuit cup' for the cheeseburger filling. 1 tube (16 oz) jumbo flaky biscuits
Place one cheese cube onto the bottom of each biscuit cup. Scoop 1.5 tablespoons of the ground beef mixture into each biscuit cup.
48 cubes mild cheddar cheese
Bake for 5-7 minutes. Take the pan out of the oven and place two more cheese cubes on top of each biscuit cup. Bake for an additional 5-7 minutes, or until the cheese has melted and the biscuit cups are golden brown.
Allow them to cool for about 3-5 minutes before removing them from the muffin tin and serving.
