Looking for a quick and easy meal that's packed with flavor and requires minimal cleanup? Look no further than this delicious one pot Cheesy Taco Skillet recipe. It's a satisfying dinner that's perfect for a new spin on Taco Tuesday.

Ingredients
  

  • 1 pound ground beef
  • ½ teaspoon kosher salt
  • 2 cups chicken broth
  • 1 can (15 oz) black beans drained & rinsed
  • 1 can (14.5 oz) petite diced tomatoes undrained
  • 1 cup long-grain white rice (uncooked)
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped cilantro (optional garnish)

Instructions

  • In a large skillet pan, over medium-high heat, cook and crumble the ground beef and salt until the beef is no longer pink. Drain any excess grease/fat from the pan.
    * Make sure you are using a deep and wide skillet pan with a lid.

  • Add the chicken broth, black beans, diced tomatoes, uncooked rice, and taco seasoning. Stir to combine everything together.
    2 cups chicken broth, 1 can (15 oz) black beans, 1 can (14.5 oz) petite diced tomatoes, 1 cup long-grain white rice, 1 packet taco seasoning
  • Bring the mixture to a boil. Once boiling, reduce heat to low and cover the skillet pan with a lid.
    Let simmer for 20-25 minutes or until the rice is cooked through and all the liquid is absorbed.
  • Remove the skillet pan from the heat and stir in the shredded cheese until melted and combined. Garnish with chopped cilantro.
    1 cup shredded cheddar cheese, 1/4 cup chopped cilantro

Notes

Serving Size : The nutrition information listed is for 6 servings from this recipe. If you are feeding lots of little kids then you can easily get 8 servings from the recipe. This feeds my family of 6 with about one meal of leftovers. 
Ground Meat : You can also use ground turkey or ground chicken. 
Cheese : For the best results, shred your own cheese using a cheese grater. You can also use any variety of cheese that you want.
Serving Suggestions : Top this cheesy taco skillet with a dollop of sour cream, sliced avocado, black olives, or any other toppings you want. You can also serve it as 'taco bowl' and add some shredded lettuce on top with any other toppings you want. Another way to serve it is to use it as filling for inside flour tortillas as a burrito. Use it as a topping for oven baked nachos. Make quesadillas with it. Lots of options for fun ways to use this recipe or creative leftover ideas.
Can I Make This Spicy? : Yes! Here are some ideas to make this dish spicy - add a can of diced green chilies, add a can of chopped jalapeños, add cayenne red pepper or crushed red pepper flakes, add hot sauce, shredded Pepper Jack cheese, or use a packet of hot & spicy taco seasoning.
