Ingredients
1poundground beef
½teaspoonkosher salt
2cupschicken broth
1can (15 oz)black beansdrained & rinsed
1can (14.5 oz)petite diced tomatoesundrained
1cuplong-grain white rice(uncooked)
1packettaco seasoning
1cupshredded cheddar cheese
1/4cupchopped cilantro(optional garnish)
Instructions
In a large skillet pan, over medium-high heat, cook and crumble the ground beef and salt until the beef is no longer pink. Drain any excess grease/fat from the pan. * Make sure you are using a deep and wide skillet pan with a lid.

Add the chicken broth, black beans, diced tomatoes, uncooked rice, and taco seasoning. Stir to combine everything together.
2 cups chicken broth, 1 can (15 oz) black beans, 1 can (14.5 oz) petite diced tomatoes, 1 cup long-grain white rice, 1 packet taco seasoning
Bring the mixture to a boil. Once boiling, reduce heat to low and cover the skillet pan with a lid. Let simmer for 20-25 minutes or until the rice is cooked through and all the liquid is absorbed.
Remove the skillet pan from the heat and stir in the shredded cheese until melted and combined. Garnish with chopped cilantro.
