Cool off and makes these homemade & refreshing Mango Pineapple Popsicles this summer! It only takes mangoes and pineapple, water, and honey to create popsicles at home with a popsicle mold. It's easier than you think!

Ingredients

  • 2 cups mango chunks fresh or frozen
  • cups pineapple chunks fresh or frozen
  • 1 cup cold water
  • 1 tablespoon honey (or more to taste)

Instructions

  • Using a high-powered blender, add the mango chunks, pineapple chunks, water, and honey. Blend on high speed until the mixture is completely blended and smooth.
    * If your blender has it, you can also just press the 'liquify' button.
2 cups mango chunks, 1½ cups pineapple chunks, 1 cup cold water, 1 tablespoon honey
  • Pour the popsicle mixture into the popsicle molds. Leave a 1/4-inch space space from the top (for the popsicle to expand slightly while freezing).
  • Freeze for at least 6-8 hours OR overnight is best.
  • If using a silicone popsicle mold, carefully wriggle the popsicle by the stick, side-to-side and front-to-bake to loose it up. Then carefully pull the popsicle out. Serve immediately, and return any uneaten possible to the freezer.

Notes

Having Trouble Getting The Popsicles Out? : If you have tried gently wriggling the stick back-and-forth and still having trouble, do this. Run some hot water on the bottom of the popsicle mold and then carefully pull them out. The hot water will help loosen them from the edges of the popsicle molds.
Make It Creamy : Try adding some yogurt (plain, vanilla, orange cream, pineapple, tropical flavored) into the blender with the other ingredients for a creamy popsicle.
Water Substitute : Instead of water you can use coconut water, coconut milk, or try using juice instead - like a pineapple orange banana juice, mango juice, or pineapple juice.
Canned Fruit : Use canned crushed pineapple and/or canned mangoes in place of fresh or frozen. Be sure to drain the juice from the can (you can even reserve the juice to use in place of the water).
Fruit : If you want to use fresh fruit, but don't want to do all the cutting, buy the pre-cut, peeled, chunked fresh fruit in the deli area at the grocery store. You will just have to chop them up and that's it.
