Muddy Buddy Chex Mix With Andes Mints and Mint Cookies
This mint chocolate version of the popular & classic muddy buddy Chex mix is one of my favorites. Powdered sugar and chocolate coated cereal with a mint twist thanks to the Andes Mints and mint cookies that get mixed in for serving.
It’s a fun seasonal recipe for Christmastime with its mint chocolate explosion of flavors and textures throughout. Simple to make in one bowl and no oven needed! All the ‘cooking’ is done in the microwave.
Ingredients Needed
- Andes Mints : You can chop up some mints or sometimes you can find chopped Andes Mints near the chocolate chips.
- Semi-Sweet Chocolate Chips : Milk chocolate chips or dark chocolate chips can also be used if that’s what you prefer.
- Salted Butter : If using unsalted butter add a pinch of salt (like 1/8 teaspoon).
- Rice Chex Cereal
- Powdered Sugar
- Optional Add-Ins : For some crunch, texture, and increased mint flavor add some additional chopped Andes Mints, green mint m&m’s, or chop up some mint cookies (like the Keebler Grasshopper cookies).
How To Make Mint Chocolate Muddy Buddies (Puppy Chow)
Place the chopped Andes Mints, semi-sweet chocolate chips, and butter inside a large microwave-safe bowl.
Heat on high in the microwave for 30 seconds and then stir well. If any unmelted chocolate remains, continue heating in 15 second increments and stirring well after each, until it’s a smooth and melted mixture. It’s important to not overheat so only microwave in small increments to avoid this.
Add the Chex cereal into the melted chocolate mixture and gently stir together until it’s well coated.
Sprinkle 1 cup powdered sugar over the chocolate coated cereal and stir it as well as you can. Add the other 1 cup powdered sugar and place a lid on the bowl, or wrap tightly in tin foil, and shake the bowl to combine the cereal and powdered sugar until it is uniformly coated.
Spread the Chex mix snack mix out onto a large rimmed baking sheet that has been lined with parchment paper, wax paper, or foil. Allow them to set completely at room temperature.
When ready to serve, transfer the snack mix to a serving bowl and garnish with any additional add-ins.
How To Store Leftovers
For optimal freshness, keep the mint chocolate muddy buddy snack mix at room temperature in a cool, dry place for up to 1 week. Ensure that the container or bag is sealed to prevent moisture from getting in. Use an airtight contain or gallon-sized Ziploc bag to store the middy buddies.
Helpful Recipe Tip
The trickiest part of this recipe is ensuring that your chocolate doesn’t seize and become too thick to coat the Chex cereal. The Andes Mints melt pretty well, but if you overheat them, the mint layer will cause the chocolate to seize, and you won’t be able to use it.
If you are using the microwave, don’t heat the chocolate mixture for longer than 30 seconds at a time and be sure to stir it well before trying to reheat it any longer.
