Bone-In Pork Chops Sheet Pan Dinner Recipe (With Yellow Potatoes + Green Beans)
I love meals where everything cooks and is served on one pan. This sheet pan dinner has it all – protein with the pork chops and a healthy does of vegetables with potatoes and fresh green beans.
There are three different cooking times so be sure to read through the directions (in the recipe card below) so that you accurately cook each ingredient. With a short ingredient list, and even with the different bake times, this is a dinner that can comes together fairly quickly and it’s a hearty meal that everyone can enjoy.
Ingredients Needed
- Bone-In Pork Chops : Use thin cut bone-in pork chops so they will cook in the time given. If the pork chops you are using are thicker then plan on adding them to the sheet pan along with the potatoes so they’ll have enough cook time.
- Extra Virgin Olive Oil
- Zesty Herb Seasoning Packet : This is a packet of seasoning mix from the McCormick Grill Mates brand. You will find it by the other seasoning packets like taco seasoning, etc.
- Yellow Potatoes : Buy the baby sized potatoes and cut them in half OR you can buy the whole potatoes and chop them up into smaller chunks.
- Fresh Green Beans : Trim the ends off of each green bean and make sure they’re washed. You will need about 1 pound of green beans which is equal to 1.5 cups of green beans.
- Kosher Salt, Black Pepper, Garlic Powder
- Grated or Shredded Parmesan Cheese : This is an optional topping but I highly recommend using it.
Step-by-Step Instructions For How To Make This Sheet Pan Dinner With Pork Chops and Veggies
- Preheat the oven to 425℉. Spray a sheet pan (12″x17″) with nonstick cooking spray.
- Set the pork chops on a cutting board or plate and drizzle 1 tablespoon of olive oil, making sure to rub it into both sides.
- Sprinkle half of the seasoning packet over top the pork. Use your fingers to rub and press the seasoning onto both sides of the pork. Set the pork chops aside to rest.
- In a large bowl, add the chopped potatoes, 1 tablespoon of olive oil, and the remaining half of the zesty herb seasoning packet. Stir to coat all the potatoes.
- Place the seasoned potatoes on 1/3 of the prepared sheet pan. Cook for 10 minutes.
- While the potatoes are in the oven, place the trimmed green beans into a bowl. Drizzle with 1 tablespoon olive oil, and add the garlic powder, salt, and pepper. Stir to coat.
- Remove the pan from the oven and turn the potatoes. Add the seasoned pork chops into the center (next to the potatoes) and return the pan to the oven. Cook for 10 minutes.
- When the timer goes off, add the seasoned green beans to the sheet pan and cook for 15-20 minutes OR until all the veggies are softened to your preference and the thickest part of the pork reaches an internal temperature of 145℉.
- Garish the potatoes with shredded or grated parmesan cheese and serve immediately.
I Can’t Find The Zesty Herb Seasoning Packet. What Should I Use?
I can easily find the packet of seasoning by the taco seasonings and other packets at the grocery store. It’s from the McCormick Grill Mates brand. If you can’t find it then there are several other options.
- Use any seasoning packet. Make sure it’s about the same size in ounces as the zesty herb packet (1.06 ounces).
- Use dried seasonings to equal the packet. You’ll need about 1.5 tablespoons of dried seasoning to equal what’s in the packet. Use a seasoning mix of garlic & herb. I like the one from Kinder’s brand or McCormick has lots of dried seasoning blends that would work well too.
- You can also use a packet of zesty Italian seasoning mix or regular Italian seasoning mix.
How To Store Leftover Bone-In Pork Chops Sheet Pan Dinner
Allow the sheet pan pork and veggies to cool to room temperature before placing them into airtight container. Place the meat separately from the veggies. They will keep well in the fridge for 3-4 days.
I recommend storing the meat separately from the potatoes and green beans to prevent complications to the consistency and appearance of the veggies.
Leftovers can be eaten cold, as a salad topping, or chop up the pork and use it inside a recipe that calls for cooked pork.

This is a simple, easy sheet pan pork chop recipe and here are some tips and helpful tricks to make your meal successful.
- Use Thin Cut Bone-In Pork Chops : The recipe and cook times are designed for a thinner cut bone-in pork chop. This will allow the pork to cook properly in the cook time given. If you are using the really thick cut bone-in pork chops, then start cooking them with the potatoes. If you are using boneless pork chop then you probably won’t have to add them until later in the cook time as they won’t need as long to cook as the bone-in chops do.
- Cut Potatoes Evenly : Try to cut all the potatoes in roughly the same size to ensure that they cook evenly. Don’t cut them into too tiny of pieces or else they will overcook and become very mushy. I like you use the baby sized potatoes and then just half each potato. This way they are large enough to not overcook but still small enough to cook properly.
- Turn Potatoes & Veggies : For each stage of your sheet pan meal (like when you add additional ingredients) be sure to keep an eye on the food and give it a stir to ensure it does not overcook or burn. If something looks burnt or overcooked, simply open the oven and give it a good stir so that everything will have a nice even crust on it for serving.
