Preheat the oven to 425℉. Spray a sheet pan (12"x17") with nonstick cooking spray, or line it with parchment paper.
Set the pork chops on a cutting board or plate and drizzle 1 tablespoon of olive oil, making sure to rub it into both sides.

Sprinkle half of the seasoning packet over top the pork. Use your fingers to rub and press the seasoning onto both sides of the pork. Set the pork chops aside to rest.
In a large bowl, add the chopped potatoes, 1 tablespoon of olive oil, and the remaining half of the zesty herb seasoning packet. Stir to coat all the potatoes.
3 cups halved yellow baby potatoes
Place the seasoned potatoes on 1/3 of the prepared sheet pan. Cook for 10 minutes.
While the potatoes are in the oven, place the trimmed green beans into a bowl. Drizzle with 1 tablespoon olive oil, and add the garlic powder, salt, and pepper. Stir to coat.

Remove the pan from the oven and turn the potatoes. Add the seasoned pork chops into the center (next to the potatoes) and return the pan to the oven. Cook for 10 minutes.
When the timer goes off, add the seasoned green beans to the sheet pan and cook for 15-20 minutes OR until all the veggies are softened to your preference and the thickest part of the pork reaches an internal temperature of 145℉.
Garish the potatoes with shredded or grated parmesan cheese and serve immediately.
