This easy crock pot corn casserole – also referred to as Jiffy corn casserole – is a delicious holiday side dish and perfect for the busy holiday season because it saves oven space! No oven needed as it cooks in the slow cooker.
It’s also easy enough to make for family dinner during a busy weeknight or a cozy weekend dinner.
The texture is that of a corn pudding and it’s a classic for a reason. With its mild corn flavor, soft creamy texture, cornbread, and cheese it’s sure to be a hit.

Only 7 Simple Ingredients Needed
- Jiffy Corn Muffin Mix
- Whole Kernel Corn : This is a 15 ounce can of corn, either in yellow corn, white corn, or gold n’ white corn; make sure it has been drained well before adding it into the slow cooker.
- Creamed Corn : Do not drain this! You want to dump in all the those sweet corn juices from the creamed corn into the slow cooker.
- Sour Cream : Full-fat is best for the best thick, creamy texture and taste.
- Shredded Cheddar Cheese
- Melted Butter : I use salted butter, but unsalted can be used just fine if that’s your preference.
- Large Egg

How To Make Crockpot Corn Casserole (Printable Recipe Card)
Spray your slow cooker insert with nonstick cooking spray.
In a large bowl, mix together the Jiffy cornbread mix, corn, creamed corn, sour cream, shredded cheddar cheese, melted butter, and large egg until thoroughly combined.

Pour the cheesy corn casserole mixture into the slow cooker and smooth out the top.
Cover and cook on LOW heat for 4 hours, or until the center is set.

How To Store Leftovers
Jiffy corn casserole leftovers should be stored in an airtight container, in the refrigerator, for up to 3-4 days.
- To Freeze : Ensure the dish is completely cooled and then transfer the corn casserole to a freezer-safe container, and freeze for up to 2-3 months. Thaw in the refrigerator overnight before reheating.
- To Reheat : For a single serving, microwave individual portions until heated through. For larger servings, place the corn casserole in a baking dish and heat at 350 degrees F for 10-15 minutes or until thoroughly heated.


Substitutions & Ingredient Notes
- Whole Kernel Corn : You can use canned yellow corn, white corn, or gold n’ white corn. I love using the gold n’ white corn with the mix of sweet yellow corn and sweet white corn in it. Both the regular and low-sodium options will work here. I don’t recommend using frozen corn as the texture is a bit different and it will have more of a crisp bite to it compared to the softer canned corn.
- Sour Cream : I think full fat sour cream gives the best taste and texture, but you could use lite sour cream or even plain Greek yogurt. Or do half yogurt + half sour cream for a lighter but still creamy option.
- Cheddar Cheese : The mild, medium, or sharp version of cheddar cheese will all work. You could also change up the flavor and use Colby Jack, Monterey Jack, or Pepper Jack for some spice.
- Butter : I use salted butter but you can use unsalted butter if that is your preference.
- Jiffy Cornbread Mix : This is a small box of the dry ingredients for cornbread. Do not prepare it according to the box instructions. Simply dump the dry mix into the mixing bowl along with the other ingredients called for. You can also use the honey cornbread Jiffy mix for a slightly sweeter corn casserole.

How Can I Stop The Condensation On The Lid From Making The Corn Casserole Soggy Inside The Slow Cooker?
Because this dish bakes covered in the slow cooker, condensation can build up on the underside of the lid. When you take the lid off, and as it bakes, there will be water/condensation that falls from the lid. To prevent this, place a paper towels over top the slow cooker, or a tea towel, and then put the lid on. Ensure the paper towel or towel does not sag into the dish, but rather it’s positioned just under the lid. This will catch and absorb the condensation before it can drop into the casserole.
Does This Dish Travel Well For Potlucks and Family Gatherings?
This dish travels really well, making it a great option if traveling for the holidays, for get togethers, and potlucks. I recommend leaving the corn casserole inside the slow cooker on the WARM setting if you’re taking it somewhere.
Can I Use The Honey Cornbread Version Of The Jiffy Cornbread Mix?
Yes, if you would like a sweeter note to your dish, the honey version works great for that.
Should I Prepare The Cornbread Mix Before Adding It Into The Mixing Bowl?
No, you do not need to prepare the cornbread mix according to package directions on the box. Just dump the dry contents from the box into the mixing bowl along with the other ingredients.
