Ingredients
1box (13.25 oz)vanilla cake mix
2largeeggs
1/3cupcanola or vegetable oil
2cupsFruity Pebbles cereal(divided)
Instructions
Preheat the oven to 375℉. Line two rimmed cookie sheets with parchment paper and set aside.
In a large mixing bowl, using an electric mixer, beat the cake mix, eggs, and oil until well combined.
1 box (13.25 oz) vanilla cake mix, 2 large eggs, 1/3 cup canola or vegetable oil
Stir in 1½ cups of Fruity Pebbles cereal until combined.
2 cups Fruity Pebbles cereal
Place the remaining 1/2 cup Fruity Pebbles into a seperate small bowl.
Use a medium cookie scoop to scoop the cookie dough out of the bowl and roll it into a ball.Dip the top of the cookie dough ball into the remaining Fruity Pebbles. Then arrange them onto the prepared cookie sheet (12 cookie dough balls per cookie sheet).
Bake for 9-11 minutes or until the edges of the cookies have set.* Allow the cookies to cool on the baking sheet for about 10 minutes before transferring them to a wire cooling rack to finish cooling.
Notes
Use a white cake mix or yellow cake mix instead of vanilla. I think the vanilla cake mix tastes the best but any cake mix can be used. Make sure you are using the newer size of boxed cake mix; 13.25 ounces.
The recipe was tested and created using the Betty Crocker brand vanilla cake mix (13.25 ounces).
Use melted butter instead of oil if you prefer. If using melted butter it is the same measurement of 1/3 cup.
For a sweeter cookie try adding in 1 cup of white chocolate chips to the cookie dough batter along with the Fruity Pebbles.
If the cookie dough is too sticky to handle and roll into balls, place the bowl of cookie dough inside the fridge for 15 minutes and that should help to make it not as sticky.
