Fruity Pebbles Cookies (Cake Mix Cookies)

Fruity Pebbles were always one of my go-to childhood cereals. The crunchy little pieces, the colors, and the fruity taste was my favorite.

These cake mix cookies take that nostalgic childhood cereal and turn them into soft-baked and chewy cookies that are super simple to make thanks to the boxed cake mix as the starting base of the recipe.

Only 4 Ingredients Needed For Cake Mix Cookies

  1. Vanilla Cake Mix : Use the newer size of cake mixes, the 13.25 ounce size. Not sure why they keep changing the size of the box, but for research and recipe testing purposes, this recipe has been tested using the 13.25 ounce size cake mix.
  2. Large Eggs
  3. Canola or Vegetable Oil
  4. Fruity Pebbles Cereal

How To Make Fruity Pebbles Cake Mix Cookies

Preheat the oven to 375 degrees F. Line two rimmed cookie sheets with parchment paper and set aside.

In a large mixing bowl, using an electric mixer, beat the cake mix, eggs, and oil until well combined.

Stir in 1.5 cups of Fruity Pebbles cereal until combined.

Place the 1/2 cup Fruity Pebbles into a small bowl.

Use a medium cookie scoop to scoop the cookie dough out of the bowl and roll it into a ball. Dip the top of the cookie dough ball into the remaining Fruity Pebbles. Then arrange them onto the prepared cookie sheet (12 cookie dough balls per cookie sheet).

Bake for 9-11 minutes or until the edges of the cookies have set.

Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire cooling rack to finish cooling.

How To Store Leftover Cake Mix Cookies With Fruity Pebbles

Store the leftover cake mix cookies inside an airtight container, or a Ziploc storage bag, at room temperature for 3-4 days.

The cookies can also be frozen for up to 3 months but please make note that once frozen and then thawed, the Fruity Pebbles cereal will be softer and not as fresh and crisp once they’re thawed from frozen.

Recipe Tips

  • Use a white cake mix or yellow cake mix instead of vanilla. I think the vanilla cake mix tastes the best but any cake mix can be used. Make sure you are using the newer size of boxed cake mix; 13.25 ounces.
  • The recipe was tested and created using the Betty Crocker brand vanilla cake mix (13.25 ounces).
  • Use melted butter instead of oil if you prefer. If using melted butter it is the same measurement of 1/3 cup.
  • For a sweeter cookie try adding in 1 cup of white chocolate chips to the cookie dough batter along with the Fruity Pebbles.
  • If the cookie dough is too sticky to handle and roll into balls, place the bowl of cookie dough inside the fridge for 15 minutes and that should help to make it not as sticky.

  • 1 box (13.25 oz) vanilla cake mix
  • 2 large eggs
  • 1/3 cup canola or vegetable oil
  • 2 cups Fruity Pebbles cereal (divided)

Instructions

  • Preheat the oven to 375℉. Line two rimmed cookie sheets with parchment paper and set aside.
  • In a large mixing bowl, using an electric mixer, beat the cake mix, eggs, and oil until well combined.
    1 box (13.25 oz) vanilla cake mix, 2 large eggs, 1/3 cup canola or vegetable oil
  • Stir in 1½ cups of Fruity Pebbles cereal until combined.
    2 cups Fruity Pebbles cereal
  • Place the remaining 1/2 cup Fruity Pebbles into a seperate small bowl.
  • Use a medium cookie scoop to scoop the cookie dough out of the bowl and roll it into a ball.
    Dip the top of the cookie dough ball into the remaining Fruity Pebbles. Then arrange them onto the prepared cookie sheet (12 cookie dough balls per cookie sheet).
