You're going to LOVE this super easy and truly 'lazy' dinner recipe with only 3 ingredients! Lazy Enchiladas are shortcut enchiladas made with frozen taquitos, enchilada sauce, and shredded cheese. It's an easy dinner casserole made in just one pan that the whole family can enjoy.
1bag (8 oz)shredded Mexican blend cheese (or any variety cheese)
Instructions
Preheat the oven to 425℉. Spray a 9x13 baking dish with nonstick spray.
Arrange the frozen taquitos in a single layer in the baking dish. I can fit about 18 of them, but depending on the shape of the dish you're using, you may need slightly less.*Make sure to fill the bottom of the casserole dish in an even layer of taquitos. I like to also put some on the sides so I can get more taquitos inside the casserole pan.

Pour the can of enchilada sauce over top the taquitos.
1 can (10 oz) red or green enchilada sauce
Add the shredded cheese on top of the enchilada sauce.
1 bag (8 oz) shredded Mexican blend cheese
Bake for 25 minutes or until the cheese is melted & golden brown and the taquitos are heated through.
Serve with your favorite toppings such as sour cream, chopped tomatoes, pico de gallo, guacamole, shredded cheese, chopped cilantro, drizzle of queso sauce, etc.
Notes
Spice? : Add diced jalapeños (fresh or canned) to the top of the taquitos, either before or after baking. You could also add a little jalapeño juice from the can into the enchilada sauce to intensify the heat and jalapeño flavor in the dish. Add a can of diced green chilies over top the enchilada sauce before you add the cheese. Use shredded pepper jack cheese, add a dash of hot sauce, or try using a spicy enchilada sauce. Variations : Use red or green enchilada sauce, or try using a warmed queso cheese dip for cheesy enchiladas with some spice, you can also use any variety of frozen taquitos that you want (chicken, beef, cheese, southwestern, etc).
