Lazy enchiladas are a super quick enchilada recipe because the base is frozen taquitos! Yes, frozen taquitos!

Taquitos are basically like an enchilada with meat and cheese rolled up inside, which makes them the perfect short-cut to making enchiladas the easy way.

You only need 3 ingredients for this great recipe and it’s ingredients that you can easily keep on hand, that way you always have a quick & easy dinner option when needed. This simple recipe really is the best dinner to make for those busy weekdays or switch up your taco Tuesday with this fun recipe!

Minimal Ingredients Needed (Only 3 Simple Ingredients!)

  1. Frozen Taquitos : Use your favorite frozen taquitos for this easy enchilada recipe! Beef taquitos, cheese taquitos, chicken taquitos, or southwestern taquitos will all work very well in the recipe. 
  2. Enchilada Sauce : Use red enchilada sauce or green enchilada sauce. 
  3. Mexican Blend Cheese : This is a bagged pre-shredded cheese that is a Mexican blend cheese. Normally I love shredding my own cheese, but the purpose of this recipe is to be like so stupid easy, so we’re going with the store-bought shredded cheese.

How To Make Taquito Enchiladas (Printable Recipe Card)

Preheat the oven to 425 degrees F. Spray a 9×13 baking dish with nonstick spray.

Arrange the frozen taquitos in a single layer in the baking dish. I can fit about 18 of them, but depending on the shape of the dish you’re using, you may need slightly less. Make sure to fill the bottom of the casserole dish in an even layer of taquitos.

Pour enchilada sauce over top the taquitos. 

Add the shredded cheese on top of the enchilada sauce. 

Bake for 25 minutes or until the cheese is melted & golden brown and the taquitos are heated through. 

Serve with your favorite toppings such as sour cream, chopped tomatoes, pico de gallo, guacamole, shredded cheese, chopped cilantro, etc.

How Should I Store Leftovers of Lazy Enchiladas Recipe?

Leftover lazy enchiladas should be stored tightly covered, or in an airtight container, for up to 5 days in the refrigerator. Reheat single-serving portions in the microwave until heated through. I do not recommend freezing this recipe as the sauce and cheese will separate once frozen and thawed.

What Are Some Substitutions I Can Make?

  • Frozen Taquitos : Use your favorite frozen taquitos! Anything works such as chicken, beef, spicy, southwestern, or cheese. You can also use as many taquitos as the 9×13 baking pan will fit; as it will vary depending on if the baking pan is rounded or square cornered. 
  • Red Enchilada Sauce : Use canned green enchilada sauce or a cheese sauce such as queso fresco cheese sauce or queso dip. 
  • Mexican Blend Cheese : Use any variety of shredded cheese that you prefer; such as Pepper Jack cheese for some spice, Monterey Jack cheese, cheddar cheese, or Colby Jack cheese. You can shred your own cheese from a block of cheese, or buy a bag of pre-shredded, ready-to-use shredded cheese.

Serving Suggestions

These lazy taquito enchiladas are great served alongside some traditional side dishes such as refried beans, tortilla chips, Easy Mexican Rice or Cilantro Lime Rice, or black beans. You can also make it easier and use some packaged rice mixes such as Knorr or Rice-a-Roni. 

And of course, be sure to set out bowl of your favorite various toppings such as sour cream, chopped red onion, shredded cheese, green onions, chopped cilantro, black olives, pico de gallo, avocado slices, Guacamole, salsa, or try a drizzle of heated queso dip or this Copycat Cafe Rio Dressing.

How Can I Add More Spice To The Dish?

There are several ways to add more spice, you can add diced jalapeños (fresh or canned) to the top of the taquitos, either before or after baking. You could also add a little jalapeño juice from the can into the enchilada sauce to intensify the heat and jalapeño flavor in the dish. Add a can of diced green chilies over top the enchilada sauce before you add the cheese. Use shredded pepper jack cheese, add a dash of hot sauce, or try using a spicy enchilada sauce.

  • 18 frozen taquitos
  • 1 can (10 oz) red or green enchilada sauce
  • 1 bag (8 oz) shredded Mexican blend cheese (or any variety cheese)

Instructions

  • Preheat the oven to 425℉. Spray a 9×13 baking dish with nonstick spray.
  • Arrange the frozen taquitos in a single layer in the baking dish. I can fit about 18 of them, but depending on the shape of the dish you're using, you may need slightly less.
    *Make sure to fill the bottom of the casserole dish in an even layer of taquitos. I like to also put some on the sides so I can get more taquitos inside the casserole pan.

  • Add the shredded cheese on top of the enchilada sauce. 
    1 bag (8 oz) shredded Mexican blend cheese

  • Serve with your favorite toppings such as sour cream, chopped tomatoes, pico de gallo, guacamole, shredded cheese, chopped cilantro, drizzle of queso sauce, etc. 

Notes

You could also add a little jalapeño juice from the can into the enchilada sauce to intensify the heat and jalapeño flavor in the dish. Add a can of diced green chilies over top the enchilada sauce before you add the cheese. Use shredded pepper jack cheese, add a dash of hot sauce, or try using a spicy enchilada sauce. 
Variations : Use red or green enchilada sauce, or try using a warmed queso cheese dip for cheesy enchiladas with some spice, you can also use any variety of frozen taquitos that you want (chicken, beef, cheese, southwestern, etc).
