Sloppy Joe Biscuit Casserole


Sloppy Joe Biscuit Casserole is a fun and easy to make twist on the classic sloppy joe sandwich. A savory sloppy joe mixture is topped with gooey melted cheese, and pieces of buttery biscuit dough. The best part - you only need 6 simple ingredients to make it - canned biscuits, ground beef, sloppy joe sauce, cheese, garlic, and onion. 

Ingredients
  

  • 2 pounds ground beef (I use 93/7)
  • 1 yellow or sweet onion finely diced
  • 1 tablespoon minced garlic
  • 2 cans (15 oz each) sloppy joe sauce
  • 2 cups shredded cheddar cheese
  • 12 Pillsbury Grands Homestyle Biscuits

Instructions

  • Preheat the oven to 350°F. Spray a 9x13 casserole dish with nonstick cooking spray. Set aside. 
  • In a large skillet, over medium high heat, cook and crumble the ground beef and finely diced onion until the meat is browned and no longer pink. Drain or soak up the excess grease from the skillet when done.

  • Stir in the garlic and cook for 1 minute. 
    1 tablespoon minced garlic
  • Stir in the sloppy Joe sauce and let it simmer for about 10 minutes until it has thickens lightly. This also gives the flavors time to blend together. 
    2 cans (15 oz each) sloppy joe sauce
  • Evenly spread the sloppy joe mixture into the casserole dish. Top with the shredded cheddar cheese. 
    2 cups shredded cheddar cheese
  • Cut each biscuit dough round into quarters (4 pieces per biscuit) and place them on top of the cheese layer in an even layer across the top.

  • Cover the pan with aluminum foil and bake for 10 minutes. Uncover and bake for an additional 10-15 minutes until the biscuits are cooked through and golden brown. 
  • Remove the casserole from the oven and let it rest for 5-10 minutes before serving it hot. Enjoy!

Notes

Biscuits : Most of the packs come in a 8 pack or a 5 pack, so you will need to buy 2-3 packages in order to have 12 biscuits for the top of the casserole. 
Seasonings : I always like to add some salt & pepper to the ground beef but with the canned sloppy Joe sauce, it could get too much salt depending on personal preferences. So add salt and pepper as needed when making the recipe. I use just a bit like 1/2 teaspoon kosher salt and a few grinds of the black pepper when browning the ground beef. 
Garlic : Mince or press fresh garlic cloves to equal 1 tablespoon, use 1 tablespoon chopped garlic from a jar, or garlic paste in the same amount.
