This sloppy Joe biscuit casserole takes everything you love about the classic sandwich – savory saucy beef mixture with that sweet and tangy kick – and tucks it under a layer of golden, buttery, fluffy biscuits.
Biscuit casseroles are one of my family’s favorite dinners. Everyone loves the pillowy biscuit topping and there are so many varieties of a biscuit casserole – like this Pepperoni Pizza Biscuit Casserole and Taco Biscuit Bake.
It’s a cozy meal, comforting, and definitely one of those weeknight hero meals that is so simple to make, with only 6 easy ingredients, and a family favorite even for those picky eater.

Only 6 Simple Ingredients Needed
- Ground Beef : I use lean 93/7 ground beef.
- Finely Diced Onion : 1 medium is what you”ll need. Use a sweet onion, white onion, or yellow. I prefer using a sweet onion.
- Minced Garlic : Use fresh garlic cloves that have been pressed or minced, use chopped garlic from a jar, or garlic paste.
- Sloppy Joe Sauce : Two 15 ounce cans of store-bought sloppy joe sauce.
- Shredded Cheddar Cheese : Use sharp cheddar, medium cheddar, or mild cheddar.
- Refrigerated Homestyle Biscuits : This is like the tube of biscuits either in store brand or Pillsbury. You will need 12 of them so double check your package and buy two if necessary.

How To Make Sloppy Joe Biscuit Bake
Preheat the oven to 350°F. Spray a 9×13 casserole dish with nonstick cooking spray. Set aside.
In a large skillet, over medium high heat, cook and crumble the ground beef and finely diced onion until the meat is browned and no longer pink. Drain or soak up the excess grease from the skillet when done.
Stir in the garlic and cook for 1 minute.

Stir in the sloppy Joe sauce and let it simmer for about 10 minutes until it has thickens lightly. This also gives the flavors time to blend together.
Evenly spread the sloppy joe mixture into the casserole dish. Top with the shredded cheddar cheese.
Cut each biscuit dough round into quarters (4 pieces per biscuit) and place them on top of the cheese layer in an even layer across the top.

Cover the pan with aluminum foil and bake for 10 minutes. Uncover and bake for an additional 10-15 minutes until the biscuits are cooked through and golden brown.

- Ground Beef : Other options include ground turkey, ground chicken, or a mix of two ground meats; such as ground beef and ground turkey. I use 93/7 lean ground beef but you can use whichever you prefer.
- Onion : I use a sweet onion, but other options are a yellow or white onion.
- Sloppy Joe Sauce : This is the main flavor of the dish so I would go with a brand you love the tase of, or you can even use homemade sloppy joe sauce.
- Cheddar Cheese : For best results shred the cheese from a block of cheese using a cheese grater. Sharp, medium, or mild cheddar can all be used. Another good alternative is Colby Jack cheese.
- Homestyle Biscuits : These are the tube shaped biscuits that you will find in the refrigerated area of the grocery store alongside the refrigerated cookie dough and cinnamon rolls. The recipe calls for 12 biscuits, so depending on the brand you are buying, you may need to buy two packs to equal 12 biscuits. Any variety of the refurgeated biscuits can be used such as flaky layers or buttermilk even. I use the Pillsbury brand but I know most stores also have a store brand.


How To Store and Reheat Leftover Sloppy Joe Casserole
Any leftover casserole should be stored covered in the casserole dish, or remove portions of the leftovers to an airtight container, and store in the refrigerator for up to 3 to 4 days. To reheat, place individual portions in the microwave for 45-60 seconds until heated through.
To freeze unbaked as a freezer meal, assemble the casserole up until the point of baking it. Cover the pan in a double layer; first plastic wrap and then a layer of aluminum foil. Freeze for up to 3 months. Let the casserole thaw in the fridge overnight before cooking according to the directions. You may have to add 5 minutes to the cook time if baking the casserole from the fridge.

Why Should I Let The Casserole Rest Before Serving?
It’s important to let the casserole rest for at least 5 minutes before serving it, as this will allow it to reabsorb some of the liquid back into the meat, making each might more saucy but not runny. And the casserole will be really hot so you might want to let it cool especially if feeding little ones.
Can I Add Some Peppers or Mushroom To The Dish?
Yes, add some chopped green bell pepper or chopped fresh mushrooms into the meat mixture. I would add the green pepper with the ground beef and onion, and then wait to add fresh mushrooms when you add the sloppy joe sauce.
