Chocolate Rice Krispie Treats Recipe (With Cocoa Pebbles Cereal and Chocolate Chips)

This Rice Krispie treats recipe is made for the serious chocolate lover’s only! I will take all the chocolate I can get – and these krispie treat cereal bars are the best way to fix that craving.

Made with Rice Krispies and Cocoa Pebbles cereal, these treats are covered in a marshmallow chocolate mixture and then some extra marshmallows and chocolate chips are added in for good measure.

They’re soft, sweet, chewy, and full of chocolatey goodness.

Ingredients Needed

  1. Rice Krispies Cereal – The name brand or store brand both work just fine.
  2. Cocoa Pebbles – Again, look for these in the name brand or a generic store brand.
  3. Salted Butter – I prefer using salted butter because it helps balance out all the chocolate and sweetness, if you prefer to add your own salt amount then use unsalted butter and add some additional salt as necessary.
  4. Mini Marshmallows
  5. Sea Salt
  6. Semi-Sweet Chocolate Chips

How To Make Cocoa Pebbles Chocolate Cereal Krispie Treats

Line a 9×13 baking pan with parchment paper, foil, or spray it well with cooking spray. Set aside.

Mix the Rice Krispie cereal and cocoa pebbles into a large heat-safe bowl. Set aside.

In a large saucepan, over low heat, melt the butter and 6 cups of the mini marshmallows while stirring constantly to prevent burning. Do not increase the heat at all.

Once the mixture is completely melted and smooth, add 1.5 cups of the chocolate chips and the sea salt. Continue cooking and stirring for 2 more minutes to allow everything to melt and combine together.

Pour the melted chocolate mixture over top the cereal inside the large mixing bowl. Gently stir together until completely combined. Once the chocolate is cool to the touch, it helps to go in there with greased hands (cooking spray) to make sure it’s evenly mixed.

Once mixed, add the remaining 2 cups mini marshmallows and the remaining 1/2 cup chocolate chips. Stir to combine and distribute them throughout the mix.

Press the cereal treats into the prepared pan and allow the chocolate Rice Krispie treats to cool completely, about 30-60 minutes at room temperature. Cut into squares and enjoy!

How To Store Chocolate Rice Krispie Treats

To properly store the krispie treat bars, ensure they have cooled completely at room temperature. They can be stored at room temperature (preferred method) for 3-4 days. Make sure they are in an airtight container or Ziploc bag.

Variations & Substitution Ideas

  • Chocolate Chips : Use milk chocolate, dark chocolate, or semi-sweet chocolate. Whichever you prefer, or try using a mix of both or all three.
  • Garnishes : Add some chocolate sprinkles on top of the bars or some chopped nuts. You can even drizzle some melted chocolate over top and then add the sprinkles and nuts as a pretty garnish.
  • Butter : If using unsalted butter, you may want to add an additional 1/4 teaspoon sea salt, or nothing at all depending on preference and taste.
  • Cereal Options : For extra chocolate goodness use all cocoa pebbles cereal in the recipe. You can also use chocolate Rice Krispies cereal + cocoa pebbles. Or use all rice Krispies cereal in the recipe instead of the two different ones.

Tips For Making Rice Krispie Treats Recipe

  • Use Fresh Marshmallows : Ensure that your marshmallows are soft and fresh. Stale marshmallows may not melt properly, which can yield lumpy or tough-to-eat cereal treats.
  • Melt Marshmallows + Butter Slowly : When melting the marshmallows and butter, use low heat and make sure to stir constantly. Do not turn up the heat to try to speed up the process, it won’t work! The gentle heat helps to prevent scorching and ensures a smooth and creamy texture. It also helps prevent overheating the marshmallows, which can lead to dry and hard treats.
  • Add Chocolate Chips At The Right Time : A portion of the chocolate chips will get added to the melted marshmallow mixture to create a rich, chocolatey base. Stir until the chocolate chips are completely melted and combined. Do not add the chocolate chips until the butter and marshmallows have completely melted, or they may overheat and seize up. Make sure to mix the treats well and allow them to cool a bit before adding the remaining chocolate chips. If you add them too soon, they will just melt and you won’t have the chunks of chocolate throughout the cereal treat bars.
  • Mixing Tips : It will be hard at first to thoroughly mix the cereal and melted chocolate marshmallow mixture together, but keep at it and it will come together. If it’s too sticky, use a silicone mixing spatula sprayed with cooking spray to help. As the treats cool, it’s actually easiest to go in with clean hands (spray with cooking spray) to really ensure the treats are mixed thoroughly.

Ingredients
  

  • 4 cups Rice Krispies
  • 4 cups Cocoa Pebbles
  • 4 tablespoons salted butter
  • 8 cups mini marshmallows divided
  • ½ teaspoon sea salt
  • 2 cups semi-sweet chocolate chips divided

Instructions

  • Line a 9×13 baking pan with parchment paper or spray with cooking spray. Set aside.
    * I spray the pan first and then lay a pre-cut parchment paper sheet inside the pan. The spray help the paper adhere to it and stay in place.
  • Mix together the Rice Krispies and Cocoa Pebbles inside a large heat-safe mixing bowl. Set aside.
    4 cups Rice Krispies, 4 cups Cocoa Pebbles
  • In a large saucepan, over LOW heat, add the butter and 6 cups mini marshmallows. Cook and stir constantly until it's melted completely smooth. About 5 minutes.
    * Do not turn the heat up. Keep the heat on LOW and continually stir it to avoid scorching.
    4 tablespoons salted butter
  • Once it's completely melted, add 1½ cups chocolate chips and sea salt. Stir and cook for 2 minutes until everything is melted and combined.
    ½ teaspoon sea salt
  • Pour the melted chocolate mixture over top the cereal in the mixing bowl. Gently stir together with a wooden spoon or spatula until completely combined.
    * Once the mixture cools a bit, go in there with your clean hands (sprayed with cooking spray) to ensure that it's thoroughly combined. It's usually easier mixing it with your hands.
  • Add the remaining 2 cups mini marshmallows and 1/2 cup chocolate chips and stir together to distribute them throughout the treats.
  • Press the treats into the prepared pan. Allow the chocolate krispie treats to cool at room temperature, for about 1 hour, before cutting and eating!
